Pueblo entrepreneurs are bringing the soul of Pueblo food and culture to the food truck with JuDoRo’s Grill. Pueblo natives Desiree and Dana Herrera know Pueblo food well.

Dana, a third generation steel worker, and Desiree, a former hospital employee, said they dreamed of opening a food truck for years. “We wanted to do something for ourselves, something we love,” said Desiree.
A Love for Cooking
Desiree has always loved cooking and often cooked for family, friends, and Dana’s coworkers at the steel mill.
The Herrera’s felt something was missing from the Colorado food truck scene after visiting several food truck conventions in Denver – Pueblo style food.

“A lot of people don’t know Pueblo food” said Desiree. The Herrera’s hope their food truck might be a way to introduce Pueblo’s food to a larger public.
This motivated Desiree and Dana to open a food truck in Pueblo. Desiree said Covid indirectly motivated them to open the food truck sooner than they originally planned.
Fresh and Locally Sourced
JuDoRo’s Grill food truck is serving up an exciting menu with lots of new takes on Pueblo culinary classics.
The menu also features many of Desiree’s tried and true recipes. She’s been perfecting these recipes since she was a young mother. “They are all my recipes” she stated “except the red chile which is my mom’s recipe.”
It’s Pueblo, you gotta have green chiles, said Desiree.
All of the menu items are made fresh including her salsa. The green chile is made with local chile she buys from Vigil Farms. “It’s Pueblo, you gotta have green chiles,” said Desiree.
Pueblo Culinary Classics & the Green Chile Dog
The menu includes classics such as tacos, taquitos, and quesadillas. Parents will be happy to know they even have a Kids Menu. You can also find some unique items like their Green Chile Dog- a hot dog smothered in fresh Pueblo Green Chile.
The recipe appears to be inspired by the legendary Pueblo Slopper- the green chile smothered open face burger which was the subject of a Travel Channel’s Food Wars episode in 2010.
JuDoRo’s might be the only place in town where you can get your hands on a Green Chile Dog – served only on Saturdays.

Other notable menu items include Mexican Fry Bread – a green chile smothered sopapilla- and the Elote Dog topped with corn, cayenne pepper, mayo and queso fresco.
Sunday’s Pre-fixed Menu
On Sundays the menu is reduced to weekend classics: menudo, posole, and breakfast burritos. Buena staff tried them all and can confirm that everything is delicious.

It’s All About Family
JuDoRo’s (pronounced Jue-Doe-Roes) Grill is named after Herrera’s son and grandson’s JUstin, DOminic, and ROyce. The weekend specials are named after their daughter Adriana. JuDoRo’s celebrated their grand opening less than two weeks ago.
